Leg of Lamb with Buckwheat and Mushrooms is the Czech cousin, typical for Zlin region area. This region is well known its beautiful nature and strong habits. Parts of this region Wallachia and Slovacko are known for their strong habit and traditions. You will find many people dancing on folk songs, who are dressed in folk costumes. This is often the way musicians play to dancers – for example, violin, flute or dulcimer. The region is also characterized by beautiful nature – there are high and extensive mountains such as the White Carpathians and the Beskydy Mountains with a number of Spa Areas. As Eastern Moravia is known for its traditions, it is also known for its industrial advancement. One of the first large-scale enterprises in the Czech Republic was established here in Zlin – the world-famous shoe shop Bata. The diversity of the region is also reflected in traditional dishes. Lamb
1 lb lamb shank without bone
1/4 lb bacon
4 garlic cloves
lard
broth
1 onion
1 sprig of thyme
salt and ground black pepper to taste
Buckwheat
1/2 cup buckwheat crisps
1 cup dried mushrooms
1 onion
2 cloves of garlic
lard
1 Tbs butter
1 tsp caraway seeds
1 tsp marjoram
salt and ground black pepper to taste
Cut the leg into two pieces and sprinkle it with garlic and bacon. Add salt, pepper and roast it on all sides on lard. Then put into it a diced onion and thyme and carefully pour the water or broth.
Cover the pot and cook until the ingredients are soft. Mix one half of mushrooms with buckwheat, pour hot water in proportion one and a half measure of water to one measure of buckwheat. Then let it rest for at least an hour.
Roast sliced onion and bacon on lard with garlic. Do the same with buckwheat melted with mushrooms and add cumin, marjoram, salt and pepper in measure that the meal is tasty for you.
Fry other half of mushrooms in butter, season with salt and pepper.
Serve it with a portion of buckwheat, slices of meat and on the top put fry mushrooms.
