Sternberg Buns

3 3/4 cups all-purpose flour
3 3/4 Tbs sugar
2 eggs
1 3/4 cup honey
2 tsp baker’s ammonia
orange peel
1/2 cup candied fruit
1 tsp ground cinnamon


Combine flour, sugar, eggs, and baker’s ammonia. Add a little bit of cinnamon, anise, and four ground cloves and stir to incorporate. On a well-floured surface roll the dough, cut it in small circles, and sprinkle orange peel and candied fruit on it. Roll the dough in your hands to form a little ball and then brush it with beaten egg. Decorate the ball with almonds and then bake it on a baking sheet until golden brown.
