Button Pancakes

Button pancakes are usually eaten as a main meal, but they could also be part of a great dinner. This delicacy comes from Central Moravia, especially from the Olomouc region. This part of the Czech Republic is typically associated with wine making and cheese production, so it’s obvious that local people cook with these ingredients often or cook meals that can be eaten with a glass of wine or side of cheese. Unfortunately, people in other Czech regions are not as familiar with button pancakes as they are other dishes from Central Moravia, such as “fried Olomouc cheese,” a gastronomic specialty from Olomouc.

3 eggs
2 cups milk
1 1/2 cup cream
oil for baking pancakes
1 1/2 cup Wondra instant flour
salt to taste

3/4 lb veal brain
1 3/4 lb fresh spinach
1/4 lb butter
3 1/2 Tbs oil
1 large onion
1/4 lb grated cheese
3 1/2 Tbs butter to sprinkle
salt and ground black pepper to taste


Combine milk, cream, eggs, salt, and Wondra instant flour in a large bowl and mix until it forms a dough for pancakes. Let the dough sit for a while and then fry pancakes from it. Meanwhile, stew squeezed spinach in butter with salt and pepper. Then chop the onion into small pieces and fry the pieces in butter. Add chopped veal brain to the butter and onion mix and let it stew for ten minutes.

Put the pancakes on an oil-coated baking tray and alternately smear them with the spinach and the brain. Then sprinkle the pancakes with grated cheese and drip some melted butter onto them. Next, bake the pancakes in the oven for about thirty minutes, after which they can be removed and served. Enjoy!
