Czech Style Fried Beef Tripes

Tripe is a meat product made out of beef stomachs which are cut in to very small stripes. In the Czech Republic, it is well known as the main ingredient in tripe soup. But there are more delicious ways to prepare it. It is probably not the best looking meal, but I guarantee that it will be one of the best you will try.

Before eating this culinary masterpiece, we have to be in kitchen for a very long time. That is because tripe has a very characteristic smell. When you want to remove its odor and dirt you have to boil it in clear water at least three times. That is very difficult for some people. Because of that, you could buy it pre-cooked at some shops. Then you only need to coat it and fry it. After you serve it, you can reward yourself for all this toil in the kitchen!

Ingredients

2 1/2 cups tripes
2 tsp salt
a pinch of pepper
4 cloves of garlic
1 cup of oil for frying
1 cup breadcrumbs
2 eggs
1/4 cup milk
1/2 cup flour

Instructions

We begin with boiling the tripe. It has to be done at least three times. If we skip this step, the tripe will have a very unpleasant odor. While boiling the tripe, we can chop the garlic and prepare the other ingredients.  After we pull the tripe out of the water, we pepper it, salt it, and cover it in chopped garlic. Than we coat it in flour, beaten eggs, and breadcrumbs. At the end, we fry it in hot oil on both sides until it has a beautiful gold color.

We could serve it with potato salad, mashed potatoes, or boiled potatoes. While serving you can decorate it with garlic chips.  And if you want to be a true masterchef, you can add a creamy sauce at the side and decorate it with fresh parsley.
