Beans in sour sauce is a traditional Czech recipe from the Vysocina Region that has been forgotten a bit over the years. But this recipe is slowly starting to regain popularity. Not only are beans in sour sauce really tasty, they also make for an easy-to-prepare and very healthy dish, full of protein, vitamins, and minerals. And this meal is also inexpensive, which makes it a perfect low-budget meal for students. For this recipe it is best to use freshly-cooked beans.

White beans
2 cups small white beans
1/2 cup diced carrots
1/2 cup diced parsley root
1/2 cup diced celery
1 medium-sized onion
3 garlic cloves
4 bay leaves
1 thyme sprig
1 small potato
1 Tbs unsalted butter
1 pinch ground black pepper
1 pinch salt
2 Tbs white vinegar or apple cider vinegar
The top
1 larger onion
4 eggs
2 Tbs olive or canola oil
Rinse the beans and soak them for 24 hours. Cook the soaked beans with rinsed, diced vegetables – carrot, parsley root, celery, onion, and garlic. Add in bay leaves and thyme. Cook until the beans are soft. Grate 1 small potato and add it in to thicken the dish and cook it for another 5 minutes. At the end add in 1 Tbs unsalted butter for smoother consistency. Add in salt and pepper and pour in a shot of vinegar of your choice.
Slice the larger onion and fry it in a pan until brown and crispy. Set the onion aside. Fry the eggs in the same pan. And now it is time to serve the dish.
