Greens aren’t often thought of as playing a role in traditional Czech meals, but spinach has long been a part of Czech and European cuisine. You can use spinach as a side dish, filling, sauce, or soup. Its taste, perfectly complements the onion, garlic, and cream in this recipe. Spinach soup is simple, cheap, and very tasty!
3 Tbs vegetable oil
1 onion
4 garlic cloves
1 potato
1 lb spinach, fresh or frozen
2 cups whole milk
salt to taste
4 Tbs sour-cream or grated Parmesan cheese
Finely chop the onion and garlic. Finely grate the potato. Heat the oil and add the onion, garlic, and potato. Fry until all golden brown. Add spinach and continue frying. When well combined and spinach is wilted, pour in the milk and cook for 5 minutes. Use a hand blender and process until smooth and season with salt and pepper.
Serve with sour cream or grated Parmesan cheese.
The soup can be also served with mungo beans, arugula, radish sprouts, or dry-fried sesame seeds.
