Old Czech Apple Pudding Pastry

A very easy pastry with a sweet apple filling to warm you up in the winter.

Ingredients

5 eggs
1/2 cup granulated sugar
1 tsp grated lemon zest
1 tsp lemon juice
a pinch of salt
2/3 cup all-purpose flour
4 Tbs melted unsalted butter
plain bread crumbs + melted unsalted butter to grease the dish
2 apples
1 Tbs granulated brown sugar
1 tsp cinnamon
raisins soaked in dark rum

Instructions

Separate the egg whites from the yolks. Beat the yolks with sugar and lemon zest. Beat the egg whites with lemon juice and salt. Mix in the beaten egg whites together with the yolks. Add flour and lukewarm melted butter and mix well. Prepare 4 individual-sized baking dishes with the better and bread crumbs. Divide half of the dough into the 4 bowls and place them on a baking sheet. Preheat oven, and bake for 10 minutes. In a bowl, grate the apples and mix with sugar, cinnamon, and raisins. Add the apple mixture to the bowls and cover with the remaining dough. Bake for another 15 minutes. Serve hot.
