Pre-Lent Filled Doughnuts

In the name of the traditional Czech feast “Masopust” is the word “pust,” which means “Lent time.” But in reality, people celebrate the feast as a carnival with crazy masks and lots of food and drink. One of the celebratory dishes is PRE-LENT FILLED DOUGHNUTS. These doughnuts are mostly known in South Bohemia.

2  1/8 cups plain flour
2 Tbs yeast
5 Tbs sugar
3 egg yolks
3/4  –  1  1/2 cup milk
a pinch of salt
grated lemon rind
2 Tbs dark rum
1 cup flour for rolling dough
oil for frying
jam (currant or apricot)
powdered sugar


For the pastry, put the flour into a bowl, make a small hole in the middle, put the yeast there and pour warm milk there too. Then put the bowl into a warm place and let it sit until the pastry rises.

Next, add egg yolks, a pinch of salt, grated lemon rind, rum, and the remainder of the warm milk. Then knead the pastry to smooth consistency. Put a towel over the bowl and let the pastry sit until it rises again.

After that, knead the pastry on a floured baking board into a thin (about 1/2 inch-thick) circle. From the first half of the pastry cut 4-inch circles. On the other half of pastry, put different spots of jam; the number of spots will be the same as the number of circles. Put the cut-out circles on the jam spots. Then cut out the filled circles, which we again allow to rise for a while.

Finally, fry the doughnuts in hot oil on both sides, remove from the oil, and then cover them with powdered sugar and serve.
