Pardubice Gingerbread Cookies

Ingredients

3/4 cup all-purpose flour
3/4 cup rye flour
3 Tbs powdered sugar
2 Tbs potato starch
1/2 cup unsalted butter
4 Tbs honey
2 Tbs rum
1 egg yolk
gingerbread spice

Instructions

Combine all ingredients, adding enough flour to make a dough sufficiently firm to roll out. Work the dough well and then let it sit in the fridge for 2 hours.

Preheat the oven to 390F. On a floured surface, roll out the dough to 1/4 inch thick, dusting it with flour, if needed. Cut out your favorite shapes, lay them on a baking sheet with a rack, wash them with egg, and then bake them for 5-10 minutes, depending on their size.

Let them cool and then decorate them with royal icing. To make the icing, mix 1 egg white and the juice of half a lemon, adding powdered sugar until the mixture is bright white and thick.

Serve the decorated gingerbread cookies during the Christmas holidays.
