This delicious and healthy Carrot Cake recipe comes from the Karlovy Vary Region.
The region of Karlovy Vary is a spa region, known for its healing springs and with them and a rare natural phenomenon that for several centuries has created its unique atmosphere. However, not everyone is aware that the not too large region is home to a countless number of culture monuments, lookout and observation towers, valuable nature areas, museums, galleries and other places of interest.

1/4 cup sugar
1/4 cup hazelnuts
1/2 cup carrots
half a lemon
3 eggs
5 tsp of vanilla extract
5 tsp of powdered sugar
Grate the carrot. Roast the hazelnuts in a frying pan and then grind them into small pieces. Whip the egg whites. Then whip the yolk with sugar separately to make a mousse. Mix into the mousse the chopped carrots, hazelnuts, vanilla extract, and the juice and peel of half a lemon. Finally, mix in the egg whites. Pour the dough into a cake pan, greased with unsalted butter and coated with flour. Preheat oven yo 320F and bake for about one hour.
Sprinkle powdered sugar onto the cake and serve it!
