Little Buns with Vanilla Pudding Sauce

Does a sweet dish for lunch sound weird to you? Never mind; if you come to the Czech Republic, you would get known that a sweet main course is not unusual, which makes Czech Cuisine charming. For many Czech people little buns with vanilla pudding sauce  represents a memory of childhood and school cafeteria. This dish is called “buchty” in Czech. German language borrowed the term and named it the “Buchtel”. In Vienna, it has become famous during the period of Biedermeier and today, the Buchtel is still very popular there. It tastes especially delicious with vanilla sauce!

Ingredients

Buns:
2 1/4 cups all-purpose flour
flour for the work surface
1/8 cup sugar
powdered sugar for dusting
1 Tbs instant yeast
1/8 cup soft butter
melted butter
2 egg yolks
1/2 cup milk
1/2 grated lemon rind
a pinch of salt

Vanilla sauce:
1/3 cup granulated sugar
2 Tbs cornstarch
2 cups milk
3 lightly beaten large egg yolks
2 Tbs unsalted butter
2 tsp vanilla extract
1/4 tsp fine salt

Instructions

Prepare a sponge with lukewarm milk, yeast and 1/3 of the flour in a bowl. Dust with a little flour, cover with a cloth and leave it to rise double in a warm place. Then add the rest of the flour, egg yolks, sugar, lemon rind a pinch of salt and knead it into a dough. Finally, work in the butter and cover with a cloth and leave to rise again.

On a floured surface, roll the dough flat to about 1 inch. Cut out pieces about 2.5 inches in diameter, fold and close the edges tightly at the top. Dip each piece one by one in the melted butter and place them closely side-by-side in a well greased baking tray with the folded edge downward.

Bake in a preheated oven at 350 F for about 20-30 minutes until golden brown. Separate them to serve, and sprinkle with powdered sugar.

In a pan, mix together the sugar, cornstarch and a 1/4 tsp of salt. Add the milk, stirring to dissolve. Using a whisk, cook, stirring slowly, over medium heat until the mixture comes to a boil. Then remove from heat and stir in the butter cut into small pieces and the vanilla extract. Serve warm together with the buns.
