Onion soup is very popular in the Czech Republic. It is very easy and fast to make. This soup is good when you are hungry and want a simple meal, Onion soup is very colorful and delicious. It can be served with toasted white bread or croutons.


1 Tbs butter
1 tsp olive oil
3 big onions
1 clove garlic
1 quart cold beef broth
1 Tbs all-purpose flour
salt and ground black pepper to taste
chopped parsley or chives


Melt the butter and olive oil in a kettle that has a lid. Add the sliced onions and stir. When the onions are soft add the flour and mix. Add the cold beef broth slowly stirring to incorporate all. Salt and pepper to taste. Bring it to boil and cover. Cook for a half an hour. Serve the soup with a garnish of either chopped parsley or chives.
